Mixed Fruit and Spring Greens with White Chocolate-Orange Vinaigrette

1 15 ounce can mandarin oranges in juice -- drain and reserve juice
5 ounces mixed greens -- washed and dried
2 cups fresh strawberries -- quartered
1/2 pint fresh blueberries
1/4 cup Champagne wine vinegar
1/3 cup reserved mandarin orange juice
1/4 teaspoon salt
2 tablespoons sugar
1/4 cup white chocolate chips
3 tablespoons olive oil

In a large bowl, combine salad greens and fruit. Set aside.

To make the dressing, in a small saucepan over med-low heat, combine vinegar, reserved juice, salt, and sugar. Gently heat till sugar is dissolved. Remove from heat. Stir in chocolate chips till melted. Set aside to cool. Do not refrigerate, as chocolate will set.

Before serving, slowly whisk in olive oil. Spoon desired amount over salad and toss. Serve remaining dressing on side.
